Unlike the thick, fluffy pancakes commonly found in North America, Estonian pancakes are traditionally thin and lightly crisp around the edges. We may be biased, but they are just better: lighter, more versatile and made for folding or rolling around your favourite toppings. Enjoy them with jam, fresh berries, sugar, whipped cream or a generous drizzle of Canadian maple syrup. It is the perfect meeting of two traditions: a Canadian favourite served over a beloved Estonian classic.
